Coming from the indigenous Tzeltal community located deep within the El Triunfo Biosphere Reserve in Chiapas, Mexico, this coffee has been cultivated by local families for generations. Working alongside Beneficio Edelmira, the community led by key figure Marco Romero Santiz has transformed traditional production into a model that prioritises quality, traceability, and long-term value for farmers. By carefully mapping cultivars, training producers to harvest only peak-ripeness cherries, and processing exceptional lots such as Maragogype separately, the project has allowed farmers to command higher prices while preserving local biodiversity and cultural knowledge. The micromill’s presence at the heart of the village keeps processing, skills, and economic benefit within the community, strengthening livelihoods while showcasing the potential of community-driven, high-quality coffee production in the region.
